Our cider story begins in winter. The thousands year old grafting technique to propagate apple trees has been passed down through generations. We reacquaint ourselves with the trees during pruning time, and focus on choosing what to cut to form each tree into a shape that will best capture sunlight.
We carefully pick these apples we know so well for the fermentation and maturation process. We test to build mouthfeel. To develop tannins. To create a soft, smooth, incredible taste.
